Vegan Sausage Gravy Pie

I made this for the first time Halloween night. I had a vision of a playful meal and I already had a vegan jel pumpkin chilling in the fridge. I stopped by the store and grabbed a pack of frozen pie crusts, and some vegan cool whip for the orange jel mold.

This is the ultimate instant food, and meant more to satisfy the kid side of me and my partner. It’s not a gourmet treat, but I love me some sausage gravy!

Vegan Sausage Gravy Pie

  • 2 frozen pie crusts (you can certainly make your own as well)
  • 5 veggie sausage links or patties
  • 1 cup frozen sweet peas
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 2 cups unsweetened soy milk
  • 2 Tb. flour
  • salt and pepper

Preheat oven to 350 degrees.

Unwrap and separate the pie crusts so one thaws enough to cut it with cookie cutter to make cutouts for top crust. I used Halloween cookie cutters, but fall leaves would be great as well. Once one of the pie crusts is thawed enough, cut out shapes cut them out. You don’t have to cover the whole pie if you don’t want to.

Make the gravy. In a large sauce pan cook the sausage off, crumbling it while you go with the spatula. Sprinkle flour over sausage and add milk. Whisk until the mixture thickens.

Layer frozen veggies over the bottom pie crust. Pour gravy over the top and arrange the pie crust cutouts over the top.

Bake for 30 – 45 minutes, until crust is golden brown.
